The steakhouse that’s opening this summer in the Promenade Shops at Saucon Valley now has a name, logo and floor design.
The restaurant, which should be open by August on the third floor of Melt restaurant, will be called “Top Cut” and will be modeled after the popular Chicago-style steakhouses.
It will be operated by Paxos Restaurants, headed by restaurateur George Paxos, who also owns Melt and Torre restaurants at the Promenade Shops in Upper Saucon Township.
The restaurant was made possible by the move of Shula’s Steakhouse, which left the lifestyle center to open in Allentown’s downtown last July but then went out of business in January.
Shula’s had the exclusive right to operate a steakhouse in the Promenade Shops. The restaurant chain Bar Louis, which is not a steakhouse, opened last year in Shula’s former Promenade space.
Paxos said he had wanted to open a steakhouse in the Saucon Valley area for some time. However, he couldn’t find any location, other than the Promenade Shops, that was suitable.
When Shula’s left, Paxos secured the steakhouse rights.
“The demographic in this part of the Lehigh Valley is fantastic for something like this,” said Paxos, who also owns Blue, a grill house and event center in Bethlehem Township.
Paxos said Top Cut’s menu will reflect its name. He intends to serve only steaks from black-angus cattle from a boutique butcher in Chicago.
“The level of quality will be what you’d expect at a downtown Chicago steakhouse,” he said.
