Better late than never. The Bayou Easton makes its debut today one week after a small fire delayed the original grand opening planned for last Friday.

“It could have been very bad, but we caught it and now we’ve got everything cleaned up and we’re ready to go,” said Mo Taylor, who owns the restaurant along with business partner Cristian Duarte. “All things are positive.”

The restaurant will open at 5 p.m. today in Easton’s Centre Square, serving the same menu as the original Bayou location, which has been a successful restaurant in Bethlehem since opening in 2014.

They describe the restaurant, like the Bethlehem location, as “a fine dining experience disguised as a casual Southern restaurant.”

It serves Southern comfort food ranging from gumbo to crispy cornmeal catfish.

Once it gets into the swing of things, there will be weekly chef’s specials, too, that will differ from the specials offered at the Bethlehem location.

Aside from the two Bayou restaurants, Taylor and Duarte, who are often referred to as the “Bayou Boys,” run Grain in Allentown and plan to open a small eatery at 65 E. Elizabeth Ave. in Bethlehem in the next couple of months.

Following today’s opening, the restaurant will begin its regular hours, serving lunch and dinner from 11 a.m.-10 p.m. Sunday through Thursday and 11 a.m.-11 p.m. Fridays and Saturdays.

The restaurant is at 64-66 Centre Square, Easton.
